Skinny Peanut Butter Balls





One of our family's favorite food is peanut butter balls. They are so good... but usually not so good for you. I I decided to experiment a bit and I came up with a healthier version. They really only took about 15 minutes to throw together and my girls were thrilled.




Skinny Peanut Butter Balls

Ingredients:
1 cup of crushed Cracklin Oat Bran Cereal
1/2 cup of peanut butter
3/4 cup of chocolate chips

Directions:
After you have crushed your cereal, (I used a food processor) add your peanut butter and mix well with a fork. It took me about a minute to get it all mixed together. 

Take about a Tablespoon of the mixture and roll it into balls. If it is too dry, add a little bit more peanut butter. You want the balls to be able to stick together. 

Place the balls on a lined cookie sheet, either with foil or wax paper.

Put the balls in the freezer for about 5 to 10 minutes, just to harden them a little bit more.

While they are in the freezer, put your chocolate chips in a microwave safe bowl. Melt your chocolate, stirring every 30 seconds until it is all the way melted. 

For the lower calorie option, drizzle the melted chocolate on top. I dipped a few for my girls for an after dinner treat.

  1. If you have never tried Cracklin Oat Bran... I highly recommend it! It is the best tasting healthy cereal I have eaten!

  3. These sound crunchy, rich & delicious! ...A little less chocolate and they're definitely good for breakfast on the go! I guess you could freeze a whole batch an just take them out as you need them :-)
