Grilled Chicken and Corn Salad

I love when I find a salad that is worth my time! And the best thing is that I can make a big salad and then have leftovers for the next three days. This salad is so easy and made of fresh ingredients. Perfect for those trying to eat healthier or trying to lose weight. 

2 ears sweet corn on the cob
1 bag of romaine salad
2 cups of baby spinach leaves, chopped
1/2 cup cooked chicken, cubed (I like leftover grilled chicken)
1/2 red bell pepper, diced
green onions, chopped
1/4 cup mixed cheese (optional)

For the Corn:
Bring a large pot of water to a rolling boil. Add the ears of corn, cover and boil for 8 minutes. Remove the corn from the water and pat to dry. The corn is now cooked but you can easily throw it on the grill for some extra flavor. Put it in the refrigerator to cool.

For the Salad:
Toss the lettuce, spinach, chicken, bell pepper, green onions and cheese into a large bowl.  Add the cooled corn.

I used fat free Italian dressing on top of this salad and it tasted delicious! You could use any dressing you want! Just be sure to check the nutrition facts on the label to see how much a serving  size is.
