Cheesy Broccoli Quinoa Casserole

About a year ago I was introduced to Quinoa. And I didn't really love it. It was served plain with no seasonings... or anything. I decided to give it another try and I loved it! I made this Cheesy Broccoli Quinoa Casserole and Quinoa Chili. Both are amazing!!!! 

1 1/2 cups quinoa, uncooked
2 crowns of broccoli, cut into small florets
2 Tablespoons of butter
3 Tablespoons all-purpose flour
1 small yellow onion, diced
2 cups skim milk
1 clove garlic, minced
1 Tbsp spicy brown mustard
1/4 tsp cayenne pepper
Salt and pepper, to taste
8 oz. sharp cheddar cheese, shredded

Preheat oven to 400 degrees
In a medium sauce pan, cook the quinoa in water according to package directions and then set aside.
In a pot, add some water and bring to a boil. Place the broccoli with the pot and cover for about 4 minutes.
When done cooking rinse with cold water.
Return the drained broccoli to the large pot and add the quinoa.
In a saute pan over medium heat, melt the butter. Whisk in the flour, onion, garlic, mustard, cayenne, a generous pinch of salt and black pepper.
Let cook 1-2 minutes and then slowly add the milk, whisking until the sauce is smooth.
Let the sauce simmer, reducing the heat if necessary, about 5 minutes until thickened and bubbling.
Remove from heat, whisk in the cheddar a handful at a time until completely melted.
Salt and pepper to taste.
Pour sauce over broccoli-quinoa mixture and toss to mix. Make sure all the quinoa is mixed well.
Transfer mixture to a casserole dish and bake 35-30 minutes, until the top is nicely browned.
Serve warm.

  2. Hi, I'm not clear about that first cooking of the broccoli, do you boil the water add the florets, cover and turn the stove off or let it boil covered for the 4min? I too wanted to like Quinoa but just haven't found a way to use it with flavor. I would love to give this a try.
